BASIC MUFFINS

1/4 cup olive oil
1 egg
1 cup milk
1/2 cup sugar
2 cups SR flour

Use this basic recipe on its own or add things like 1 cup apple pie filling, 1 cup mashed banana, drained tinned cherries, frozen berries or choc chips...

1. Preheat oven to 180C and prepare muffin tin - I use patty pans so they don't stick.

2. Combine the oil, egg, milk and sugar in a mixing bowl. Mix thoroughly with a
fork or wooden spoon.
.
3. Pour in the flour and mix. Do not over work the batter, just make sure there is no dry flour. At this point, add in any other flavourings and mix gently.

4. Spoon the batter into the muffin tin and bake for about 20 minutes until a skewer inserted comes out clean. Remove from oven and allow to cool in the tin before turning out on a wire rack.
