
This is much more like the Jubilee cake I remember my mum making - it's a firm cake with lots of fruit (I used some mixed fruit, raisins and glace cherries). It's not as sweet at the other one I made (a lot less sugar) but is still very yummy. The thin icing adds just enough sweetness.
