Remember Gilmore Girls? That TV show was so popular in our house when it was running. We have all 7 seasons on DVD (and they are nearly worn out!) and Kirby can quote Lorelai & Rory verbatim.

Sookie, the sweet, rotund chef in the show, once made a batch of cookies for Lorelai and Rory. We googled it and a recipe came up. We have been making these ever since (tweaked a bit).

SOOKIE ST JAMES COOKIES
250 gms butter, softened
1 cup brown sugar
1/2 cup caster sugar
1 and 1/2 teaspoons vanilla extract
2 eggs
2 and 1/4 cups plain flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 and 1/2 teaspoons ground coffee beans
1 cup dark chocolate, chopped
1/2 cup milk chocolate melts
1/2 cup white chocolate melts

Preheat oven to 180C. Line 2 baking trays with paper. It will take a couple of batches to bake.

Cream butter and sugars until pale, add in vanilla and eggs and beat a further minute. Add in salt, flour, cinnamon, baking powder and coffee then the chocolate. Mix to combine well with a wooden spoon.

Place big teaspoonfuls on baking paper covered trays. Bake for 6 minutes then rotate trays and turn around and bake a further 4 minutes then check then probably another 2 minutes. You want them pale golden so they are a bit chewy. The darker they are, the crunchier.

Boil the kettle and have a cuppa......bliss!
